Spice Up Your Camping Menu

I don't know about you, but I have certain favorites when it comes to food and some are meant for specific occasions - such as camping! Other times though, I want to bring something new and different to keep the menu exciting and tummy's happy. One of the new things I brought on our camping trip (that I don't usually think of for camping) was 7 Layer Bean Dip! Yummy!

Now it will be obvious that I'm not super-mom because I bought this from the store instead of making it from scratch. My sanity was at stake! But we do have one of the best recipes for this - which is why I rarely ever buy it. It's so much better homemade! And hopefully there are a couple tips (secrets) with this recipe that you haven't tried yet. If you haven't - you'll love it, I promise!

7 Layer Bean Dip
  • 1 can refried beans (mix a little salsa in with this for better texture & flavor!)
  • 16 oz sour cream 
  • 1 packet of taco seasoning (combine taco seasoning and sour cream & mix well.)
  • Guacamole (homemade or otherwise)
  • Colby Jack Cheese
  • Chopped tomatoes
  • Sliced Olives
  • Chopped Green Onions
Layer in a 9 x 13 pan in the order listed (starting with refried beans). Chill and serve with your favorite tortilla chips. Easy peasy!!!

This was a great snack to bring out and let everyone munch on. I didn't have to worry about the kids eating candy or junk food and I think everyone enjoyed it even more. We make this for Superbowl parties and BBQ's as well and it's always a hit. Now I know it's marvelous on camping trips as well!

Where does the time go?

We are spiced to have the lovely, long-standing Leigh Covington as our guest this week! She going to lay some tips and advice and fun stuff down and pump us up!

How many times do you wish for more hours in a day? I think we all do! We have to run kids to soccer games and piano lessons while working on laundry, cooking dinner, and attempting to fit in our 10K steps for the day. This is also hindered by our attempt to make ourselves presentable if we leave the house or if someone stops by for a visit, let alone having our kids dressed and ready to take on the world.

I used to think that things would get easier as my kids got older and they could do more for themselves, but that's not true. Life stays just as busy and hard - just in different ways. Life is simply hectic! And while we're all wishing there was more time to get ALL of these things done and working ourselves into the ground day and night so that we can scratch things off our "to-do" list...

Are we making time where it REALLY matters?

Yes... I'm sure you know where I'm going with this... are we making time to be together? QUALITY time - not simply time when we are all in the same house on our various electronics working toward different goals. Unfortunately, that doesn't count.

While there are a million ways to make time for our littles, I'm going to take you all along on my family's camping adventure from a couple of weeks ago.

First, let me explain that I've spent the past 2 1/2 years finishing my teaching degree which has left me lacking in the T.I.M.E. department. Feeling like an epic failure, I decided we needed to get away from our regularly scheduled program and enjoy some quality time. This included me packing up my three kiddos (on my own, since the hubby had to work) driving them two hours away from home, into the mountains to attempt a camping and fishing experience. What happened?
  1. No cell phone service! We had to be creative and be together!
  2. We had to work toward similar goals. We could set up the tent together, unload the car together, cook meals together, & figure out how to untangle fishing line together!
  3. When we all froze at night because I didn't bring enough blankets - we could snuggle together!
  4. Talking, laughter, and spending TIME with each other. 
It's probably quite obvious that you don't have to go to the mountains to do any of this. That was just something I have wanted to do with my kids for awhile, but it worked and it was worth it! Taking time for one another - playing together and finding a sense of unity, is all worth it. While, I'd love it if that meant there was no arguing, that wasn't really the case. Lets face it - we are human, but the arguing was happening less and fun was happening more. Hallelujah!

How else can make time for each other?
  • Eat dinner together - don't forget to talk in between mouthfuls!
  • Read a book to one or all of your children.
  • NO TECH TIME - make time to talk and play. Ask your kids about their day.
  • Play games together. My kids are card sharks so we love card games at our house.
  • Cook something together, or teach them how to cook.
  • Work together.
  • PUZZLES! (A new favorite for us!)
  • Go on a walk, ride bikes, go swimming, etc.
Truth be told- spending time together helps our kids, and even our spouse, know that we genuinely care about them and what is going on in their life. It helps build confidence and security in who they are and what they are capable of. Don't we all feel more empowered when we feel loved and accepted? Doesn't someone taking TIME for us help build those feelings of love and security? The love and support of family will probably reach much further than we can ever truly know.

For me, time with my kids and husband is this important so I put it at the top of my priority list. Oh well if I'm behind on laundry. Oh well if I'm the weirdo who bakes 5 dozen cookies with her kids to take around for Christmas gifts. That's okay. Despite how we might feel sometimes --- being a mom is the best job in the world, and definitely the most important. Does that mean that everything else we do isn't important too? Nope! Not at all. It simply means that you shouldn't downplay your role as "mother." Embrace it! And make time to embrace the time you have with those you love.

Road Trip Tips!

Summer = Travel.

In the Fall, I'm a football mom like Liz. But in the summer, I'm a baseball mom. Two of my boys travel for tournaments on the weekends. Needless to say, we are on the road a lot! Those drives and hotel stays are fun at first, but they can become tiresome. So this week I'm going to talk about how to make road trips easier. Start by planning ahead!
  • For the driver
    • audiobooks!
    • update your music - because finding a good station is almost impossible on the road, even if you have satellite - it repeats!
    • I like to listen to a movie with the kids, like Wreck it Ralph or Despicable Me, it makes the time and the miles fly
  • For the kids
    • get movies onto the devices - they can take a while to load, don't wait till the last minute!
    • don't forget the chargers!
    • don't forget the headphones/earbuds!
    • bring a book - mine have summer homework, and even if they didn't I encourage them to read something
    • something different - mine will sometimes bring an old gaming system for a change of pace, like a PSP or Nintendo DS
    • for younger kids - there's a ton of creative, fun stuff available that wasn't when my kids were little - Crayola mess-free comes to mind
    • what NOT to bring - no stickers, no little pieces, nothing you can't replace! (see Liz's article about how to keep these things safe)
    • do bring something different to pull out at the pit stops or buy a trinket on the road - more waiting and sitting still at restaurants can be tough!
  • Know where you're going
    • GPS isn't perfect, I print out a map to be safe
    • figure out how long it will take
    • see if you can avoid construction
    • pick good spots to stop for meals or rest breaks
    • if I have friends in the area, I like to give them a heads up, possibly meet them for lunch between games
  • Be comfortable - sitting for a long car ride, you need to be comfy or you'll be cranky
    • bring long sleeves--even tho it's hot outside, the a/c keeps a car brrr cold even when the fan is on the lowest setting
    • pillows if space permits
    • sunglasses and a spare
    • don't pack stuff in your suitcase you want easy access to in the car
  • Food! I'll be talking about snacks and drinks on Wednesday

Roanoke or Bust!

Happy Friday, friends of mine!

Today I’m writing to you from the past because at the moment this posts I’m going to be en route to Roanoke, Virginia for an appearance at the MystiCon Fantasy and Horror Convention. And I’m super, super pumped about it. I’m going to be an author guest and breathe the same air as George R. R. Martin!! (the author of the A Song of Ice and Fire series best known as Game of Thrones) I’ll be a little excitable all day to say the least.

As most of you probably know, I’m a fantasy novelist and I do my best to attend as many fantasy/science fiction conventions as my schedule allows. Over the years I’ve accumulated a rather, um... unique list of items that I can’t go without at a con and I thought I’d share some of the special ones with you here. No judging!


#1: Extra deodorant. Oh yes, this one deserves to be at #1. Cons can be hot and crowded, and you’ll want to have a travel-size deo in your purse at all times, lest you join the smelly masses.




#2: An assortment of hats. I can’t feel authory without a proper author hat. So while some of you might be packing bags of shoes for trips, I have a bag of fedoras, caps, and bowlers.

#3: Cat-ear tiara. Duh! Because TIARA + CAT = AWESOME. But if you want to see the real thing, it's part of my Twitter profile pic :-)



#4: Bubble Wands. Those little bubble wands that you usually get as party favors are PERFECT attractors to your book signing table. Crowd a little thin? Pucker up and blow some bubbles because even grown-ups get like this over bubbles.

#5: My purple hair extensions. Because if I can't have purple hair at a fantasy convention, what's the point of having hair at all?

Savor The Last Days of Sumer


This time of the year, a lot of us have those end of summer blues. Kids going back to school means the return of early mornings, am battles (Isn't it funny how they can be up before 7 ever.single.day. They don't have school but can't be woken by a tornado as soon as school starts), and more work for Mom. And if you think school is more work for you, believe me I'm feeling it too. When you drop your kids at the curb next week, I'll be there to meet them.

No use complaining though. It's either those 7 am mornings or home school, and I'd rather be trapped with 26 of your kids than attempt to tell mine something else she isn't going to listen to. LOL.
Since we can't avoid, let's make the most of it. Slip in an end of summer trip. That place you've always wanted to go, wanted your kids to see? Pack up and go there.

Not an option? Limited time or money? We can work with this. Do an end of summer day trip. Think of things that might be two hours from you in any direction, use Google if you have to. They can be corny. It's okay to do something kind of cheesy or touristy. The point is to do something you're about not to have time for, right? And if you can't find anything in that radius from you that you think might be interesting, find a nice lake, beach or state park area and head up. If you want to be frugal pack an ice chest with snacks and lunches. But I plan to accidentally "forget" the cooler. There is no excuse not to cook like a Monday.

Let's Make This Beach Easy


Vacations are great for energizing the soul, but the getting ready for vacations? Not so much....


Like I said on Monday, I just came back from the beach. Two weeks of fun with the family. Visits to lighthouses and the spot where pirates are said to gather- all exciting stuff! And most of which went pretty much undocumented because I forgot to pack the freaking camera! 

Yes, we had iPhones and got some good shots, but that Nikon I forked out a fortune for? The one with the crisp zoom that would have gotten me pictures of my family of ocean swimmers from my comfy spot on the beach? It sat at home.

That wouldn't have happened if I had better execution. And planning. 

On the ride home, as I moped about coming home reflected fondly on our trip, I came up with a solution- I need to put an end to harried, haphazard packing.

I decided to make a master packing list. One I can keep on my hard drive and print out when I’m ready to start tossing stuff in the trunk.

Now, next year, when I pack, I’ll print one out and I’ll check it twice. (And I’ll print one for the man and each kiddo, so they don’t have to keep asking me what to bring!)
