Let Us Eat Cake


Ever want to have your cake and eat it too?

And you want it easy enough to manage on a Monday?

Here's a simple, delicious treat that comes in under a 100 calories...well, unless you add your own creative toppings. 

Ingredients:

Start with two cake mixes. 
One regular, one angel food (one has to be angel food or it won't work)
Mix the two cake mixes together (I pour them both into a plastic bag and shake it up, so my mix is easy to use and store)

To make the cake: 

Pour 3 Tbs. of the mix in a bowl or mug
Add 2 Tbs. water
Microwave for one minute (hence the name 3-2-1 cake)

Eat! 

I've made this mix with chocolate, lemon, strawberry...any flavor is excellent!


Now, about the eating cake...

Talk about the misquote of the centuries!


The first place the phrase, "Let them eat cake" was recorded was in 1765 in Jean-Jacques Rousseau's autobiography, when young Marie was only nine years old and not yet queen. Sadly, lynch (or guillotine) mobs are not known for fact-checking.

    1. As the laziest cook around, this is highly recommended. I like to add a good dose of whipped cream to them. Maybe some strawberries. Oh goodness, so many options for this simple cake treat.

    1. Get the light whipped cream and it's delicious and not so bad for you. My sister went to Weight Watchers and the adviser told her to do this because the light has a nominal amount of calories per teaspoon, so my sister asked her how many in the entire tub. My sister and I...we think a lot alike.

  4. Certainly easy enough. How do you feed your whole family at once though? I made a mug cake once, not bad. I knew that Marie Antoinette didn't say it, didn't know the quote was that old though.

    1. I make them make their own. I just provide the mix. I prefer to put this in a bowl. The mug is cute, but so much harder to wash out- and you know how hard I try to get out of extra work.

  6. Wow, that cake sure sounds easy. I might just have to give it a try the next time my sweet tooth is screaming for a little something-something. (Guess I'd better buy some cake mixes first, huh?) I used to be a bake-a-holic, and there was ALWAYS some kinds homemade goodie in the house. Not a good idea now that it's only my hubby and me here. He isn't supposed to eat it, and I sure don't need it. But just a little cup... wouldn't hurt... much.

    1. I hear ya! Pre-kids, cookies would go stale and cakes would mold. Their wasn't much reason to make them. Then when I had kids, I still didn't bake unless heavily guilted into doing it. LOL. I'm so not good at this housewife stuff...always looking for ways to get out of work.

    1. Super easy. Conner (boy #4) was making his own when he was still in the single-digits-years old. Though now he makes a 6-4-2 cake so it's double the normal size.

  8. My friend Carol had someone make a birthday cake for me last week. It was a white cake. It doesn't have anything to do with this recipe. I bring it up because it was so kind. It was the second time in my life that someone made a birthday cake for me.

    1. I read white cake and I hear whhhiiite cake. Django and Leo DiCaprio have forever changed white cake for me. When I left the theater, all I could think was how delicious that whhhhiiite cake looked. I need to go home and make some whhhhiiite cake. I did and it was good.

      You're friend was very sweet to do that. And random brain thoughts work well with me. :)
